Operating alongside Resto 213, the Loyalist Market offers students an alternative look at food service. As a retail outlet, students learn large-scale production techniques, practice product consistency, and further develop their understanding of financial responsibility. Additionally, as part of their work in the Loyalist Market, second-year students are challenged to create their own dishes – which they are tasked with planning, costing, and producing on their own.
